Chocolate Marshmallows

Yield: approximately 24 servings

Ingredients

1 cup water (split)

1/4 cup gelatin

1 cup maple syrup

1 tsp vanilla

1/8 tsp salt

1/4 cup cacao powder

Instructions

  • In a stand mixer, using the whisk attachment, mix 1/2 cup water and 1/4 cup gelatin. Let sit, giving time to bloom.

  • In a small sauce pan, bring the other 1/2 cup water and 1 cup maple syrup to a slight simmer. Once barely bubbling, pour into stand mixer.

  • Turn stand mixer to medium/high and let mix for 8 minutes.

  • At 8 minutes, add vanilla, salt, and cacao powder. Mix for another 4-6 minutes until you begin seeing little hills forming.

  • Pour the marshmallows into a parchment paper lined glass baking sheet. Place in the fridge for 6-10 hours.

  • Store on the counter for a week and in the fridge for 2 weeks.
