Healthy(ish) Refined Sugar Free Pumpkin Spice Latte Syrup

Yield: Approximately 1 cup of syrup

Ingredients:

1/2 cup pumpkin puree

2 teaspoons pumpkin pie spice

1/3 to 1/2 cup water (adjust to desired syrup consistency)

1/4 cup maple syrup

1 1/2 teaspoons vanilla extract

Instructions:

In a saucepan, whisk together the pumpkin puree and pumpkin pie spice until they are well combined.

Gradually add 1/3 to 1/2 cup of water to the saucepan, depending on your desired syrup consistency. If you prefer a thicker syrup, use less water; for a thinner syrup, use more. Stir until the pumpkin mixture and water are fully incorporated.

Once the mixture is simmering, add the maple syrup to the saucepan. Continue to simmer and stir for an additional 5-7 minutes to allow the flavors to meld together.

Remove the saucepan from the heat and stir in the vanilla extract.

(Optional: If you want a smoother syrup without any texture from the pumpkin puree, you can strain the syrup through a fine-mesh sieve into a clean container. Press down on the pumpkin solids with a spoon to extract all the liquid.)

Allow the syrup to cool to room temperature before transferring it to an airtight container, such as a glass jar or bottle. Store the pumpkin spice coffee syrup in the refrigerator for up to three weeks.
