Rocky Road Nice Cream

We all need some sweetness in our lives. This Rocky Road Nice Cream recipe helps satisfy that sweet tooth without all the processed sugars that add extra stress to our already stressed-out bodies.

For those who may not know what nice cream is, it is an ice cream alternative made from frozen bananas. You can make it any flavor you like. I’m a huge chocolate fan, so have only ever experimented with chocolate bases. Another blogger I follow says she makes a pretty delicious strawberry nice cream. Whatever passes your vibe check. 

My friends in college used to make nice cream frequently during senior year. We would volunteer at this food bank in the city late on Friday nights (and when I say late, I’m talking a starting time of 11 pm, there were some nights we didn’t leave until 3 am, it was epic). Our job was to pick up extra food from different Trader Joe’s locations across the city and then organize the food and have it ready for the food distribution the next morning. We would end the night with boxes and boxes FULL of very ripe bananas. We would often be allowed to take some food home. My friends would take the ripe bananas to freeze and later make nice cream. 

It was a fun and free way to save so many bananas from the landfill. 

Today I’m going to show you how to make rocky road nice cream, but again, feel free to experiment and share your finished products with me on Instagram. 

Ingredients

  • 2 frozen bananas

  • ½ cup milk of your choice (I use almond milk, but whole or coconut would probably give a thicker consistency)

  • 2 TBSP cacao powder

  • 1 tsp vanilla extract

  • 2 handfuls corn-syrup free mini marshmallows

  • 2 handfuls almonds

  • 1 handful chocolate chips

Instructions

  1. Put bananas, milk, cacao powder, and vanilla in a blender. Blend until smooth.

  2. Add marshmallows, almonds, and chocolate chips, blend until pieces are chopped and evenly distributed.

  3. Serve with more chocolate chips sprinkled on top
